Intel Matrix Storage Console RAID Drive Failing

Hello all-

I appreciate any help; I've been trying to troubleshoot this on my own and with the help of friends for a couple of weeks to no avail.  I am running Windows Vista Ultimate with 2x500GB HD. Apparently they came configured with RAID 0 using the Intel Matrix Storage Console.  I did not really know what this was before this issue.  Now it has been telling me that one of the drives is failing.  I have my PC backed up to an HP Mediasmart 485 server running WHS.  I bought a new 1.5TB HD (before I knew what this issue was) and wanted to replace both drives with that.  It seems that because it is set up as RAID I cannot restore to just the one drive (at least I was not successful in doing this).  It let me put in the drive and create a new simple volume for each of my 2 drive letters that were backed up and the restore completes successfully but then it will not boot.  I do not want to try deleting the RAID before I restore in case I am unable to restore after the data is gone on the original drives.  I also don't want to buy another 500GB HD just to keep this original structure since it is several years old and I am almost out of space any way.

I know that I can copy all of my data separately to my server and then install Windows on the new drive and then copy my data back, but this will be extremely time consuming and I will then need to figure out all of my installed programs, settings, etc.

Does anyone have suggestions on how I can switch out these 2 old smaller drives for one larger one and use my server backup>

Thanks!
